Soft, chewy, chocolate dunked coconut macaroons

In loving memory of my mom, I have made these coconut macaroons every week since her passing in 2016. Coconut baked golden brown, with just the right amount of chew, and balanced beautifully with a dip in our house blend 70% dark chocolate. My mom's forever by my side when I’m making a batch. Love is never redundant, and I will never stop making these gems.
